Thanks to the durable PermaDur non-stick coating, food does not stick or burn during frying, and excess fat drains into the grooves that also leave the characteristic grill marks on the food. The even heat distribution in the frying pan enables different foods with the same cooking time to be fried at the same time, without having to move them around in the frying pan.
